Charlie Wilson at Help Yourself[1]Trained at the Natural Gourmet Institute for Health and Culinary Arts in New York, focusing on nutrition, whole foods and food and healing, and previously trained at the Cordon Bleu Culinary Institute in London, UK, Charlie opened Help Yourself organic restaurant in October 2008 to provide Key West with tasty organic food that’s not only good for us but also for our planet. Her goal is to help you help yourself!

I believe we have lost the connection to our food and have forgotten what the purpose of eating is. Food should not only taste delicious but provide fuel and nourishment for our body. Statistics show that the processed packaged food of today is no longer nourishing us. The answer to great health is simple – just eat real food; food that comes from nature, not a factory or a science lab, food that has all its edible parts intact and food that naturally has the perfect blend of nutrients needed to sustain a healthy life. At Help Yourself we only serve delicious, nutritious, real food.”

She is providing:

  • Initial menu planning with Donna Shields
  • All meals, 5 days per week during the 30 day program
  • 4 cooking lessons to help the successful participant learn to cook their own nourishing meals
  • Assist in the ‘team’ kitchen cupboard clean-up

Donna Shields, MS, RD, LD

donna headshotA registered and licensed dietitian, integrative nutrition therapist and cookbook author, Donna combines the cutting-edge science of nutrition with the culinary arts. She currently has a private practice in Key West and does recipe/product development and spokesperson work for national food companies and restaurants. She has written for numerous magazines and websites and is a former instructor at the Culinary Institute of America, Hyde Park, NY.  Her radio show Natural Living with Donna Shields KONK1680AM and at focuses on health and wellness issues.

She is providing:

  • Initial nutrition assessment and consultation to review food diaries and map out a personalized eating plan tailored for the candidate
  • 2 additional follow up nutrition consults
  • Supermarket training tour to teach label reading and best product selections
  • Kitchen cupboard clean-out
  • Co-training with Charlie on one cooking lesson


Amy Spielburg L.M.T, ISSA Certified Trainer

instructor_amy_sAmy is an owner of Stay Fit Studio, Key West, a personal trainer and licensed massage therapist. A graduate of Boulder College of Massage, she comes with 14 years experience in massage therapy and 9 years ago became a certified personal trainer as well as a Pilates and spinning instructor. Her Fitness Friday show can be heard on KONK 1680 AM and


She is providing:

  • Initial fitness assessment to determine body mass, body fat and other fitness parameters; program goals will be determined with the candidate
  • One-on-one personal training twice/week at Stay Fit
  • Free 30 day membership to Stay Fit Studio for classes (Pilates, spinning, yoga, core strength)
